Last spring, strawberries were 1.49/lb at Shaws, so I got 32 pounds.  So far, all the fruit wine recipes I've seen have used lots and lots of table sugar, but I'm not sure why.  This wine is an attempt to figure out why that is.

 

Comments

After 9 weeks, still very sour.  Adding Wyeast 5007 Malo-Lac to soften the flavor.

At bottling, it's still a bit sour.  Betsy enjoyed it like this: 12 oz wine, shaken with 1 tbsp sugar and a little ice.

Definitely want to drink it cold.

Recipe
Procedure
Miscellaneous Ingredients (Non-Fermentable)
32 lb Strawberries  
1 tsp Tannin  
7 Campden tablets  
4 tsp Pectic enzyme  

Day 1

  1. Freeze and thaw strawberries.
  2. Crush fruit into primary.  I used the meat grinder on our Kitchenad mixer.
  3. Add alchemy.
  4. Add 1 gallon water (to cover fruit).

Day 2

  1. Add water to come to gravity of 1.080.
  2. Add 4 tsp yeast nutrient.
  3. Add 1 pkg yeast.
Fermentation
Primary: 7 days @ 73° F
Secondary: 7 days @ 70° F
