My Centennial was not up to snuff (ie: 8.7% rather than 9.7%), so I threw in part of what I had in the freezer.  May end up a little more bitter than previous batches.

Broke the hydrometer along the way, so I couldn't get a good original gravity reading.

Add 100% of mash water at 162° F / 72° C

Procedure
  • Mash grains, 60 min, 152° F.
  • Collect 6.5 gallons wort.
  • Boil for 90 min, adding hops according to the schedule.
  • Cool wort, aerate, and pitch yeast ~75°.
  • Ferment ~65°, 7 to 10 days.
  • Transfer to secondary, pitching dry hops.

  • Allow to clarify about a week.

  • Separate beer from hops, add priming sugar, and bottle.
